Own-check
Anyone, who is handling food or food stuff professionally, shall carry out own-check and document this in a so called own-check program. The aim is to prevent health risk and secure the food quality.
Temperature supervision is an important part of the own-check program. The measuring result shall be documented, dated and stored for at least one year.
The own-check is statutory by EU in the regulations (EC) no. 852/2004 and 178/2002.
