Measure correctly with Mätman Check

Penetration probe




When do you use it?
When checking the temperature in hot dishes, in food that is being chilled, and in cold food, where the probe can be stitched into the food.

Which part of the probe measures the temperature?
The temperature is measured in the tip of the probe.





How do I do?

  1. Make sure that the probe is well cleaned and disinfected before entered into the food.
  2. Enter the probe as far as necessary to get a correct reading (see below).
  3. Select the correct measuring object and criterion in Mätman Check and wait for the result.
  4. Clean the probe thoroughly with cleaning cloth and/or disinfectant napkin.




How deep should the probe be entered into the food?
It should be entered so that the tip is where you suspect that the temperature is most divergent.

  • When heating food it is probably colder in the middle of the food and warmest at the surface, hence the probe should be entered as close to the centre as possible.
  • Food on a warming tray is probably coldest at the surface, hence the probe should be entered just under the surface.
  • By chilling of food it is probably warmest in the middle, hence the probe should be entered as close to the centre as possible.
  • When checking refrigerated food it is probably warmest on the surface, hence the probe should be entered just under the surface.

If you are the least doubtful, you should always measure both at the surface and deeper in the food.





How long will it take to get the correct reading?
This time is depending on how much water the food contains. More liquid implies faster stabilisation of the read temperature, since liquid conducts heat better than air.
In most food dishes you can count with about 15 seconds until the correct reading appears.
Mätman Check always waits until the temperature has stabilised, so that the reading is within the tolerance (±0.5°C).

When checking packed frozen and refrigerated goods and when measuring the temperature in dishwashers.

How do I do?

  1. Place the probe between two packages, so that the probe gets as large contact area as possible against the goods.
  2. If you have to hold the probe during measuring, avoid to hold the metal part of the probe, since the heat from the fingers can influence the reading.
  3. Select the correct measuring object and criterion in Mätman Check and wait for the result.




How long will it take to get the correct reading?
This time is depending on how big part of the probe tip that is in contact with the goods. A larger contact area gives a faster stabilisation of the reading.
You can count with about 1 minute until the correct reading appears. A measurement in a dishwasher can be considerably faster, since the water conducts the heat to the probe. Count with about 10–15 seconds in this case.
Mätman Check always waits until the temperature has stabilised, so that the reading is within the tolerance (±0.5°C).





Can I enter the wire probe into food?
No, avoid this, since the probe is not designed for it. There is always the risk that the thin thread will be damaged when you try to insert it into the goods. It is also difficult to clean from food in the joint between the metal and the cable.
